Description: White kimchi is a traditional Korean dish that differs from the more well-known red kimchi by omitting chili pepper. Instead, it is made using napa cabbage and a variety of other vegetables, such as radishes, garlic, ginger, and scallions, which are typically salted and then fermented in a mild brine with seasonings. The result is a refreshing, slightly tangy, and crunchy dish that is less spicy than its red counterpart. Baek kimchi is often enjoyed as a side dish, adding flavor and nutrients to meals, and is valued for its probiotic benefits, supporting gut health through fermentation. It is also a versatile ingredient that can be used in soups, stews, or served with rice.
OK Diabetes Doctor’s View: White kimchi is beneficial for individuals with diabetes due to its high fiber content, which helps manage blood sugar levels and promotes healthy digestion. The fermentation process in white kimchi provides probiotics that support gut health, potentially improving metabolic function and insulin sensitivity. Additionally, its low calorie and low carbohydrate nature makes it a nutritious side dish that can enhance meals without significantly impacting blood sugar.
